Haystack Cookie Recipe

Ingredients
  

  • 2 cups butterscotch chips
  • 1 cup creamy peanut butter
  • 1 container crunchy chow mein noodles
  • ΒΌ cup peanuts optional
Optional Additions
  • Mini marshmallows
  • Holiday sprinkles
  • White chocolate chips
  • Almond bark

Method
 

  1. In a microwave-safe large bowl or double boiler, combine the butterscotch chips and creamy peanut butter. Heat until fully melted, stirring frequently to create a smooth mixture.
  2. Gently stir in the chow mein noodles and peanuts (or crunchy peanut butter if using). Mix until everything is evenly coated.
  3. Using a cookie scoop or spoon, drop small mounds of the mixture onto a parchment-lined baking sheet or wax paper.
  4. Let the haystacks cool at room temperature for about 1 hour, or refrigerate them for quicker setting.
  5. Top with holiday sprinkles, drizzle with melted chocolate, or try variations like white chocolate haystacks for a festive touch.

Notes

Store haystacks in an airtight container at room temperature for up to a week or in the refrigerator for a firmer texture. For longer storage, freeze them in a freezer-safe container for up to 3 months.
