- Preheat the oven to 350 degrees. Grease a casserole dish.
- Dice the potatoes into ½ inch-1 inch pieces.
- In a medium skillet, add the ground beef and seasonings, and cook over medium low heat, breaking the meat apart as it cooks, until no longer pink. Drain any grease.
- In a large bowl, mix the cooked meat, diced potatoes, mixed veggies, and soups. Pour into the casserole dish.
- Sprinkle cheese over the top, cover with aluminum foil and bake for 40 minutes.
- Remove the foil, then bake for an additional 15-20 minutes, until potatoes are tender.
Notes
Store leftover Hobo Casserole in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave until warmed through, or cover the baking dish with foil and warm it in the oven at 350 degrees until hot. If the casserole thickens after chilling, add a small splash of milk before reheating.
